We could have some kind of setting, defaulting to false on Android/iOS and true on Linux, Windows, and MacOS, to use dialogs instead of bottom sheets. This would be good for things like the emoji picker.

We would want to abstract this out into some function that pushes either a dialog of bottom sheet based off of the setting.
